maple roasted peaches

Roasting fruit brings out their natural juices and sweetness. This simple version has only four ingredients and can be served with ice cream, oatmeal, yogurt, pancakes, etc. The possibilities are endless!

INGREDIENTS

  • 3–4 large peaches, pitted and sliced (can also use another stone fruit, like nectarines, apricots, plums, or cherries.
  • 2–3 tablespoons avocado oil, melted coconut oil, or ghee
  • 2–3 tablespoons pure maple syrup (can also use brown sugar), use more or less to taste
  • few dashes cinnamon

INSTRUCTIONS

  1. Preheat the oven to 425ºF. Place sliced peaches on a baking sheet (I use parchment to keep them from sticking, but it’s not necessary). Drizzle peaches with coconut oil, maple syrup, and cinnamon. Toss to coat.
  2. Bake for 20–25 minutes, or until peaches are tender and sweetener has caramelized, flipping halfway through.
  3. Serve peaches on ice cream, pancakes, yogurt, or oatmeal! They’re also excellent by themselves with some {coconut} whipped cream!
